Boiled Palm Sap – Miel De Palma

The boiled palm sap, commonly known as “Palm Honey” or “Palm Syrup” is a typical product of the island of La Gomera. This product is obtained from the “guarapo” (sap of the Phoenix canariensis or Canary Island Date Palm). The sap is boiled for hours and a reduction with similar colour and texture of caramel syrup is obtained.

The boiled palm sap is mainly used for dessert dressing, as well as for cheese dressing. Nevertheless it is being used as a sauce for sirloin steak or roll in batter aubergine.
