- 1SP coarse salt
- 235ml Mojo Palmero Guachinerfe(Special Pepper from La Palma)
- 50ml Oliveoil
- 100ml water
The School Shark with Mojo Palmero is one of the most popular recipes of the Canary gastronomy. It is not missing in the menu of any restaurant or guachinche. Its intense flavour makes it a very special dish
The night before leave the Shark in water with vinegar so the stong taste is softened.
The day after drain the water and wash the Shark to remove any rest of vinegar.
Boil the Shark in water and add 15gr coarse salt. When it is tender (20-30 minutes) drain the hot water.
In a bowl, mix the Mojo Palmero Guachinerfe with the oil and the water.
Add the sauce to the pot with the shark and cook at low heat for 20-30 minutes)
